PME Small Cake Leveller 18 inch is a must for all cake decorators. 

This cake leveller has a steel handle and cutting wire. It will help you achieve a professional finish for your cakes and tortes up to 16" (40cm) diameter. The cake leveller has clearly defined the height markers and the wavy wire cuts cleanly, reducing crumbs.
